This lamb dish was created before Zahav was even open. The launch of the restaurant kept being delayed, and we ended up opening just after Passover. I decided to invite my family to have a Passover Seder in the restaurant while it was under construction. It was a family gathering so I wanted to create a family-style dish, and lamb is a staple in the Middle East that also represents spring. So the idea of the lamb stewed in pomegranate for the table, the genesis of that was Passover Seder. I created this for my family. Thank God they were into it, because my family members are some of my toughest critics!
